Raw Lemon Bites

Okay guys, yes, I am still on this "manipura chakra balancing" kick and its yellow food must eats. And you can't eat yellow and NOT eat lemon (or yellow curry.)

So onto DEEZ raw balls! (hehe) I am a mom- and I have too much shit going on like trying to grow an empire not to keep my eating s i m p l e.

so here it is- the best balls you'll ever eat

what you'll need

1 cup cashews

1 cup almonds

1 cup dates

2 tsp lemon

zest of 1/2 lemon

simply put all ingredients (minus lemon zest) into a food processor, roll into balls, freeze for a 1/2 hour, sprinkle with lemon zest and EAT YOUR HEART OUT!

Golden Mylk Latte

I know, ANOTHER golden mylk latte recipe (eye rolls expected)

Honestly, this is just how I felt. I had been reluctant to jump on this wagon for so long but it kept waving itself in my face saying "just TRY me" and I am so glad I did... 

I could go on and on about the benefits of turmeric- like its anti inflammatory properties, headache relief, congestion relief, depression fighting abilities. This combined with ginger and its immunity strengthening properties, cold + flu prevention and its similar anti inflammatory properties. I mean why WOULDN'T I want to jump on this!?

On a similar note, and strong reason I decided to give this go was because of a chakra balancing series I am currently leading. Upon taking a 'chakra balance test' I discovered (at no surprise) that my solar plexus chakra 'Manipura' is crazy under active. Along with laughing, dancing and singing, yellow foods are really great for attaining balance for this fiery chakra that connects us to our will, personal power and ego. 

SO HERE IT IS! A delicious ginger added twist to the prized Golden Mylk Latte

What you'll need

1 thumb ginger

1 thumb tumeric

12-16oz coconut milk 

honey (your sweetness level)

prep

warm coconut milk in a small pot 

as coconut warms, skin both ginger and turmeric using a spoon then mince as small as you can.

once coconut milk is warmed combine all ingredients into your blender set to "liquify" for about 2 minutes 

pour and enjoy!

Raw Blueberry Bites

Currently sitting in my underwear watching the sunrise over the mountains, drinking a coconut milk coffee while listening to Tony Robbins coach me on my "business strategy." I feel grateful, I feel abundant. I feel abundant even as my yoga classes have been declining rapidly in numbers and my bank account states I have negative dollars. OUCH. Admittedly, I have been losing my mental edge this past week. But I'm not cowering....

I'm Taking my learnings and trading my sulking in for strategy and determination. 

For me to lead others from a full, abundant place and not allow my mood to create a mucky scene during my yoga classes I MUST fill my cup by nourishing myself inside and out. For me, this means lots of time in nature, lots of laughs and snuggles with my little dude and healthy delicious snackable food I can take on our hikes and park dates!

SO HERE IT IS a simple- quick- healthy- nourishing- adventure ready- snack!!

What you'll need

2 cups oats

1 cup coconut flakes (unsweetened)

1/2 cup dried blueberries

1/4 cup coconut sugar (you can sub honey, maple syrup, agave)

3 tbs (ish) chia seeds

1/2 cup cashew butter (you can sub peanut butter, almond butter)

*extra oil from cashew butter OR coconut oil if mixture isn't roll-able

 

All you have to do from here is add your ingredients to a food processor and blend until mixture is combined and roll-able. *If you do not have a food processor, combine dry ingredients in a blender, transfer to a mixing bowl and fold in cashew butter.

Roll to your perfect size and place on a parchment lined pan in the freezer for about an hour before eating. Of course, you can totally eat these at room temperature. I prefer storing my raw balls in the freezer and throwing in a bag to snack on!

Beet hummus pita pizza

Loves!

These personal sized pizzas are LEGIT! So easy to make - (got you mamas *fist bump) healthy, nutritious and vegetarian. 

Little bit of insight- I have been vegetarian for going on 5 years now and it has been the BEST choice I have made for my body. One day I will go into detail- today, I'll just leave it here and continue with these aaaammmaaaazing pizzas.

The ingredients were all gathered from good ol' Trader Joe's and follow:

  • whole wheat pita bread
  • crimini mushrooms
  • beet hummus
  • herbed chevre (goat cheese)
  • peas
  • zucchini
  • pinons (aka pine nuts)
  • arugula
  • fresh minced garlic
  • salt and pepper

Preheat oven to 375 degrees

 In medium heat pan, drizzle olive oil and saute, peas, mushrooms and zucchini - *grate zucchini length wise for long, thin strips. Season mixture with fresh minced garlic and s&p to taste.

Meanwhile, spread pita with generous amount of hummus. Once veggies are soft to your preference top mixture on individual pitas then, add goat cheese, sprinkle each with pine nuts and bake for 10 minutes.

Out of the oven, top with small handful of arugula and drizzle with olive oil sprinkling a bit of s&p

 Enjoy with a delicious glass of your favorite rose'.
