Beet hummus pita pizza


These personal sized pizzas are LEGIT! So easy to make - (got you mamas *fist bump) healthy, nutritious and vegetarian. 

Little bit of insight- I have been vegetarian for going on 5 years now and it has been the BEST choice I have made for my body. One day I will go into detail- today, I'll just leave it here and continue with these aaaammmaaaazing pizzas.

The ingredients were all gathered from good ol' Trader Joe's and follow:

  • whole wheat pita bread
  • crimini mushrooms
  • beet hummus
  • herbed chevre (goat cheese)
  • peas
  • zucchini
  • pinons (aka pine nuts)
  • arugula
  • fresh minced garlic
  • salt and pepper

Preheat oven to 375 degrees

 In medium heat pan, drizzle olive oil and saute, peas, mushrooms and zucchini - *grate zucchini length wise for long, thin strips. Season mixture with fresh minced garlic and s&p to taste.

Meanwhile, spread pita with generous amount of hummus. Once veggies are soft to your preference top mixture on individual pitas then, add goat cheese, sprinkle each with pine nuts and bake for 10 minutes.

Out of the oven, top with small handful of arugula and drizzle with olive oil sprinkling a bit of s&p

 Enjoy with a delicious glass of your favorite rose'.
