Currently sitting in my underwear watching the sunrise over the mountains, drinking a coconut milk coffee while listening to Tony Robbins coach me on my "business strategy." I feel grateful, I feel abundant. I feel abundant even as my yoga classes have been declining rapidly in numbers and my bank account states I have negative dollars. OUCH. Admittedly, I have been losing my mental edge this past week. But I'm not cowering....
I'm Taking my learnings and trading my sulking in for strategy and determination.
For me to lead others from a full, abundant place and not allow my mood to create a mucky scene during my yoga classes I MUST fill my cup by nourishing myself inside and out. For me, this means lots of time in nature, lots of laughs and snuggles with my little dude and healthy delicious snackable food I can take on our hikes and park dates!
SO HERE IT IS a simple- quick- healthy- nourishing- adventure ready- snack!!
What you'll need
2 cups oats
1 cup coconut flakes (unsweetened)
1/2 cup dried blueberries
1/4 cup coconut sugar (you can sub honey, maple syrup, agave)
3 tbs (ish) chia seeds
1/2 cup cashew butter (you can sub peanut butter, almond butter)
*extra oil from cashew butter OR coconut oil if mixture isn't roll-able
All you have to do from here is add your ingredients to a food processor and blend until mixture is combined and roll-able. *If you do not have a food processor, combine dry ingredients in a blender, transfer to a mixing bowl and fold in cashew butter.
Roll to your perfect size and place on a parchment lined pan in the freezer for about an hour before eating. Of course, you can totally eat these at room temperature. I prefer storing my raw balls in the freezer and throwing in a bag to snack on!
