Happy happy happy New Year! There is nothing that gets me more pumped than the opportunity of a fresh start full of endless possibilities. I LOVE THE NEW YEAR! I feel so much potential, opportunity and abundance in store for 2018, I hope you do too.
While, I'm not one for "resolutions" I have always been big on intention setting as a regular and daily practice. I believe our lives should be lived intentionally, mindfully void of judgement and distraction from destructive inner criticism. Nothing should keep anyone from reaching their highest and greatest potential.
In line with reaching my highest potential and honoring the talents God has provided me with, I will be sharing so much more delicious and healthy recipes this 2018! I am so excited to share one of the things that lights me up the most! Clean, healthy, mindful eating is so important to me and sharing it lights me up all the more.
With no further ado, I present...
No Bake Chocolate Peanut Butter Protein Bars
What you'll need: (please bare with me as I am totally guessing measurements and don't measure anything I make)
- 1/4 cup Cacoa Powder (pure)
- 4 tbs coconut oil
- 6 tbs liquid sweetener of your choice (I used agave)
- splash warm milk alternative of choice (I used almond milk)
- pinch salt
- 1/4 cup peanut butter powder
- 1/4 cup coconut flour (1/2 if adding a protein powder)
- 1/4 cup coconut flakes
- 1/4 cup (warmed) coconut oil
- splash milk alternative of your choice (I used almond milk)
- pinch salt
What you'll do:
using a food processor combine all dry ingredients and pulse until combined. In mixing bowl, add liquid coconut oil, agave and salt into dry mixture. Add enough milk to make the mixture formable. Do your thang and form mixture into bars or balls and freeze.
While bars are in the freezer make the outer layer.
In a double boiler, low heat, add coconut oil and agave. Once coconut oil is completely liquid add cacao powder and mix. slowly add your desired amount of warm milk to the mix.
once chocolate is finished, roll your frozen bars in chocolate, sprinkling with peanut butter powder. Return bars to freezer and enjoy cold!
